Bone in chicken thighs
When you don't have time for the entire chicken, this is how I make dinner. The meat is so delicious, tender and of course the animals so cared for!. I sear skin side down....tucking in chunks of onions around the thighs and garlic cloves that haven't been peeled. sprinkle s/p, drizzle olive oil and cook. Turn when skin is sizzling and the meat is beginning to turn color. flip & continue cooking. You can also in the height of summer, add cherry tomatoes sliced in half & chopped basil. YUM

Farm Raised Chicken!!
Thank God for the Nelson Farm, I crock pot the whole chickens, thighs, drumsticks, whatever I have available. These have more good "fat" on them than the organic chicken from Trader Joe's, which actually is so lean, it doesn't cook up right in my book. If you are looking for Real Chicken, this is it.

Oh my gosh, I can't say enough! The chickens are delicious, rich in nutrients so versatile to cook with. I cook with whole chickens as well, make stock and bone broth. I love these thighs browned in coconut oil, with garlic & onions pushed in-between them. They are moist with a crisp yummy skin.
