Drumsticks carry more connective tissue than breast meat, so they do best with a slow roast or a braise that gives the meat time to turn tender. Cook turkey to an internal temperature of 165°F.

If you love dark meat, our North Star Bison Turkey Drumsticks are the cut for you. We made them for people who would rather have a turkey leg than breast meat. Drumsticks are working muscle, so they carry more fat, connective tissue and myoglobin than breast meat. That gives them a deeper flavor and makes them much harder to dry out. Breast meat is leaner and milder, and it overcooks quickly once it goes past about 165°F. Our drummies are juicy and full of flavor, and each pack gives you two of them.

How do you cook turkey drumsticks so they're tender and not tough?
Turkey drumsticks like ours from North Star Bison get tender when you cook them past the minimum safe temperature and give them time. Dark meat is safe at 165°F, but its connective tissue breaks down best at around 175–185°F. Braising, slow roasting at a moderate oven temperature, or smoking all work well. Each leg also has stiff tendons that are easier to pull out once the meat is cooked. Our drumsticks come raw and are stored frozen, so plan ahead. They need 12–24 hours in the refrigerator to thaw, and you have to cook them before eating.
