Our feta comes already crumbled in a 6 oz (170 g) cup, ready to scatter over a Greek salad, roasted vegetables, grain bowls, flatbreads or eggs. We add a little potato starch to keep the crumbles from caking, so they stay loose and easy to sprinkle. Feta is perishable, so keep the cup refrigerated.

At Klondike Cheese Co. in Green County, Wisconsin, the Buholzer family has made cheese across four generations, and Odyssey is our label for feta and Greek-style dairy. Today we are home to five Wisconsin Master Cheesemakers, a designation awarded by the Wisconsin Center for Dairy Research for advanced training and the only program of its kind in the United States. While proud of our history, we know our reputation hinges on the quality of the cheese we make today.

Ingredients: PASTEURIZED MILK, SALT, CHEESE CULTURE, ENZYMES & POTATO STARCH ( ADDED TO PREVENT CAKING).

Common Questions

What's the difference between cow's milk feta and sheep's milk feta?
Our Odyssey Traditional Feta Cheese Crumbles are made from cow's milk, Wisconsin's finest. Feta in Greece is traditionally made from sheep's milk, sometimes blended with goat's milk, and in the European Union the name "feta" is protected for cheese made that way in Greece. Sheep's milk feta tends to taste sharper and more pungent, while cow's milk feta is generally milder. Crafted authentically in the Greek tradition, ours is a rich, creamy soft cheese with an award-winning zesty flavor.

Why do pre-crumbled cheeses like feta crumbles contain potato starch?
We add potato starch to our Odyssey Traditional Feta Cheese Crumbles to prevent caking. Crumbled feta is moist and salty, so the pieces tend to press back together in the container. A light coating of starch keeps them separate, so they scatter easily over a salad or a grain bowl. The rest of our ingredient list is classic feta: pasteurized milk, salt, cheese culture and enzymes.

Is there a kosher-certified crumbled feta cheese?
Yes, our Odyssey Traditional Feta Cheese Crumbles are certified kosher. They come as 6 oz (170 g) of traditional crumbled feta in a cup. We make them from pasteurized Wisconsin cow's milk, salt, cheese culture and enzymes, with potato starch added to prevent caking.

Is Odyssey feta made in Greece or in the USA?
Odyssey feta is made in Wisconsin, in the USA. We create it from Wisconsin cow's milk at Klondike Cheese Co., our family company in Green County, Wisconsin. It's crafted authentically in the Greek tradition by master cheese makers.

Who makes Odyssey feta?
We make Odyssey feta at Klondike Cheese Co. in Green County, Wisconsin, where our Buholzer family has made cheese across four generations. Our family's story with Klondike began in 1925, when Ernest and Marie Buholzer, immigrants from Switzerland, settled in Green County and Ernest started making Swiss cheese for the local farmers' cooperative. Today we have five Wisconsin Master Cheesemakers: Ron, Dave and Steve Buholzer, Adam Buholzer and Matt Erdley. That designation is awarded by the Wisconsin Center for Dairy Research for completing advanced training, and it is the only program of its kind in the United States. The company itself dates to the late 1800s as the Stauffacher Cheese Factory; after fire destroyed it a second time, local farmers rebuilt and renamed it Klondike, inspired by the resilience of the gold rush miners. Under the Odyssey label we also make Greek yogurt, Greek yogurt dips and labneh, and under the Buholzer Brothers label, Muenster, Brick, Havarti and Gouda.

How should I store Odyssey feta crumbles?
Keep our Odyssey Traditional Feta Cheese Crumbles refrigerated, since this is a perishable cheese. Once the cup is open, close it tightly so the crumbles stay moist and don't pick up other flavors from the refrigerator, and take portions out with a clean, dry spoon.
