Burnt Ends
High quality and great flavor. I picked these up after a hankering for Bacon/Side pork from my childhood. I fried up the small amount of sliced pieces in the cast iron. The size of most of the ends reminded me of TX so I decided to smoke them instead. I dried them out for a day, then sprinkled my favorite Heim BBQ Bacon Burnt Ends dry rub on them. Let them go @250 for almost 2.5 hours. Most of the 1" cubes rendered perfectly and felt like I was back in Fort Worth.
