Current Stock:
Considered the gold standard, type 00 flour is much finer than ordinary all-purpose flour, and it's a staple in pizza shops all over Italy. Our mix pairs it with dehydrated sourdough, salt and sugar, and we pack the dried yeast separately. Unlike plain pizza flour, our mix includes the dried yeast your dough needs to rise. Thin crust or chewy Neapolitan-style crust, it's ready for both.

One kit makes about 2 traditional-crust 10-inch pizzas, about 4 thin Neapolitan-style 10-inch pizzas, 1 thick-crust 16-inch pizza or 1 Detroit-style 13 x 9-inch pizza. It's just as good for breadsticks, cheesy breadsticks, garlic knots, calzones, stromboli, focaccia and flatbreads. We include our easy step-by-step instructions right on the package, so all that's left to do is decide on the toppings!

At DeLallo, we've spent over 60 years in specialty Italian grocery, and this mix is made in Italy. Our San Marzano tomatoes, pestos and olive oils are natural partners for pizza night.

Ingredients: WHEAT FLOUR (TYPE "00"), SOURDOUGH DEHYDRATED FROM WHEAT FLOUR, SALT, SUGAR, YEAST (DRIED YEAST, EMULSIFIER), ASCORBIC ACID.

Common Questions

How can I make pizza dough at home without a stand mixer?
Our DeLallo Pizza Dough Mix is made to be mixed and kneaded by hand, so all you need is 300 ml of warm water, a measuring cup, a mixing bowl, a fork and a little extra flour for your work surface. Our kit gives you the flour mix and a dried yeast packet, and the dough comes together in just a few minutes. Cover the dough balls and let them rise at room temperature for about 45 minutes, and they're ready to roll and stretch. We include our easy step-by-step instructions right on the package.

What is 00 flour and why is it used for pizza?
Type 00 is the Italian grade for the most finely milled flour, and it's the flour our DeLallo Pizza Dough Mix is built on. It's considered the gold standard, much finer than ordinary all-purpose flour, with a gluten content matched to what it's meant for. It's a staple in Italian pizza shops and the not-so-secret ingredient in Italy's famous pizza and pasta. Ours is expertly milled from Italian-grown wheat into a superfine, powder-like flour with the ideal gluten content for pizza making.

What's the difference between pizza dough mix and pizza flour?
A pizza dough mix like our DeLallo Pizza Dough Mix includes the dried yeast the dough needs to rise, while pizza flour is just the flour. With plain flour you measure and add your own yeast and salt. Our mix goes further: along with type 00 wheat flour, it has dehydrated sourdough, salt, sugar and ascorbic acid already blended in, plus a separate yeast packet, so the only thing you add is warm water.

What ingredients are in DeLallo Pizza Dough Mix?
Our DeLallo Pizza Dough Mix contains wheat flour (type "00"), sourdough dehydrated from wheat flour, salt, sugar, yeast (dried yeast, emulsifier) and ascorbic acid. Each 17.6 oz (1.10 lb) kit holds one package of pizza flour mix and one packet of dried yeast, and the product comes from Italy.

How much water does DeLallo Pizza Dough Mix need, and how long until it's ready?
Our DeLallo Pizza Dough Mix takes 300 ml of warm water, which is about 1¼ cups. The dough comes together in just a few minutes, no stand mixer needed. Then you cover the balls of dough and let them rise at room temperature for about 45 minutes before rolling and stretching. That puts you at about an hour from opening the kit to shaping your crust.

How many pizzas does one DeLallo Pizza Dough Mix make, and can I make Neapolitan or Detroit-style?
One DeLallo Pizza Dough Mix makes about two traditional-crust 10" pizzas, about four thin Neapolitan-style 10" pizzas, one thick-crust 16" pizza, or one Detroit-style 13" x 9" pizza. The same dough works for a thin crust or that chewy Neapolitan-style crust.

What else can I make with DeLallo Pizza Dough Mix besides pizza?
Our DeLallo Pizza Dough Mix also makes breadsticks, cheesy breadsticks, garlic knots, calzones, stromboli, focaccia and flatbreads. They all start from the same dough you'd make for pizza.
