Our story began in 1964 in a small village in the Fribourg countryside, where an old quarry offered ideal conditions for maturing cheese and was turned into our first natural cheese cellar. From our beginnings as a Gruyère ripener, we quickly established ourselves as the cheese specialist in Switzerland.

Before ready-made mixes, fondue at home meant buying, grating and blending the cheeses yourself.

What cheese is used in traditional Swiss fondue?
Traditional Swiss fondue is built on Gruyère, often blended with Emmentaler or with Vacherin Fribourgeois in the Fribourg-style 'moitié-moitié', and those are the cheeses our company knows best. Our story began in 1964 in a small village in the Fribourg countryside, ripening Gruyère in a natural cheese cellar carved from an old quarry. The classic recipe also melts the cheese with dry white wine and garlic, often with a splash of kirsch.

For a pot of cheese fondue like our Mifroma Cheese Fondue Express, the classic dipper is day-old crusty bread cut into cubes so each piece keeps some crust, which helps it stay on the fork. Small boiled potatoes, apple or pear slices, and blanched broccoli or cauliflower are popular additions, with cornichons and pickled onions served alongside. Stirring in a figure-eight as you dip keeps the cheese smooth, and in Switzerland the golden crust left at the bottom of the pot, called 'la religieuse', is saved and shared at the end.
