Our einkorn is grown on small, remote farms throughout Northern Italy and manufactured using time-honored techniques by a family of pasta artisans just outside of Lucca, Italy. Our flours are mixed with water from local mountain springs and pressed through bronze dies to give the pasta a coarse surface that holds onto sauce better. We believe it’s the attention to detail and preservation of traditional techniques that make our pastas so delicious.
