Pasture-raised no-soy thin-cut chop -- stuff and cook as a thick cut or split for thin cut chops. Each package includes one split chop, (two thin chops if split)
Most of these are butterflied — meaning they're cut thin and opened up so you can cook them as-is for a thinner chop, fold and stuff them for a thicker presentation, or split them into two true thin cuts. That flexibility makes them one of the most versatile chops on the menu. Fill them with spinach and goat cheese, a mushroom duxelles, or even leftover risotto.
